- 2 pounds new red potatoes, cut into cubes
- 1 cup bell pepper, diced (any color)
- 1/2 small yellow onion, chopped
- 2 tablespoons olive oil
- 1 tablespoon all purpose seasoning, like Mrs. Dash

Step 1Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper.

Step 2Add all ingredients to a large mixing bowl and toss until combined.
