scalloped 2 potato casserole

Adding sweet potato to a scalloped potato dish was my idea after running out of regular potatoes. I was delighted w/ the results. The sweet potato gives this side dish a nice sweet, but not too sweet bite.

Ingredients

  • 1 - clove garlic
  • 1 tablespoon butter, softened
  • 1 large onion, thinly sliced
  • 2 tablespoons canola oil
  • - salt and pepper to taste
  • 1/2 teaspoon snipped thyme
  • 2 cups milk
  • 1/2 cup light cream
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 5 medium red potatoes
  • 1 medium sweet potato
  • - nutmeg

How To Make scalloped 2 potato casserole

  • Step 1
    Heat oven to 350. Rub the inside of a 3-quart baking dish w/ garlic clove. Generously butter the dish. Place oil in lg skillet over medium heat, add onions. Cook until tender. Season w/ salt, pepper and thyme.
  • Step 2
    In medium saucepan, heat milk and cream until just simmering. In lg saucepan, melt 3 tbsp butter over medium heat. Whisk in flour. Remove from heat and gradually whisk in hot milk and cream. Return to heat to boil, whisking constantly until thickened, about 3-5 mins.
  • Step 3
    Peel all potatoes and thinly slice them. Layer 1/3 of potatoes in baking dish, season w/ salt and pepper. Sprinkle lightly w/ nutmeg. Top w/ a 1/3 of the onions and some sauce. Repeat the layering, ending w/ the sauce. bake, uncovered 45 mins. Increase oven temp to 425 and bake another 10-15 min, or until bubbly and poataoes are tender.
