cilantro lime roasted radishes and potatoes

I just Love radishes since I was a little girl, when I roasted them I could not believe the flavor! So if You never tried its a must! this is one of many side dishes I serve my family. Enjoy and what a neat sidedish for X~mas with the colors.

Ingredients

  • 15~16 - radishes
  • 5-6 - potato (depending on size)
  • 1/2 teaspoon dried cilantro
  • 4 tablespoons olive oil
  • - salt and pepper to taste
  • 2-3 tablespoons fresh cilantro
  • 1 - lime

How To Make cilantro lime roasted radishes and potatoes

  • Step 1
    preheat oven 425degrees. peel and wash potatoes, wash keep radishes whole. Chop potatoes bite size close to size of radishes.
  • Step 2
    Combined in bowl sprinkle w/olive oil and spices and rub. Put on baking sheet in oven for about 25 min or til tender.
  • Step 3
    Finish with drizzle of olive oil fresh cilantro and sqeeze from your lime. Delish. more S&P if needed.
