Ingredients

  • 6 - potatoes, cut in halves
  • 1/4 cup olive oil
  • 1 tablespoon oregano, dried
  • 1 large lemon, fresh squeezed
  • 1 sprig chives, fresh and chopped
  • - salt and pepper to taste

How To Make roasted potatoes w/ oregano, lemon & chives

  • Step 1
    wash and cut potato into 4 wedges, each
  • Step 2
    in a large bowl, combine all ingredients, except chives and toss potatoes in a coat well.
  • Step 3
    on a cookie spread them out, bake at 350 degrees about 40-45 mins...or until tender and browned.
  • Step 4
    garnish with chopped fresh chives.
