Ingredients
- 1/4 cup olive oil
- 0.7 ounce envelope italian drssing mix (good seasons)
- 1 large shallot, peeled and sliced
- 2 pounds red or white potatoes (about 5 potatoes)
- - salt and pepper
How To Make roasted italian potatoes

Step 1Preheat oven to 400F.

Step 2Mix oil and dressing mix in a large bowl until blended.

Step 3Do not peel potatoes. Cut them in half and then quarter each half.

Step 4Toss potatoes and shallot slices in the dressing mix until well coated. Season with salt and pepper.

Step 5Place in a baking dish, in a single layer. Bake 40 minutes, or until done.
