  • 1/4 c
    olive oil
  • 0.7 oz
    envelope italian drssing mix (good seasons)
  • 1 large
    shallot, peeled and sliced
  • 2 lb
    red or white potatoes (about 5 potatoes)
  • ·
    salt and pepper

How to Make Roasted Italian Potatoes


  1. Preheat oven to 400F.
  2. Mix oil and dressing mix in a large bowl until blended.
  3. Do not peel potatoes. Cut them in half and then quarter each half.
  4. Toss potatoes and shallot slices in the dressing mix until well coated. Season with salt and pepper.
  5. Place in a baking dish, in a single layer. Bake 40 minutes, or until done.
