This uses an envelope of dry dressing mix, such as Good Seasons Italian.

Ingredients

  • 1/4 cup olive oil
  • 0.7 ounce envelope italian drssing mix (good seasons)
  • 1 large shallot, peeled and sliced
  • 2 pounds red or white potatoes (about 5 potatoes)
  • - salt and pepper

How To Make roasted italian potatoes

  • Step 1
    Preheat oven to 400F.
  • Step 2
    Mix oil and dressing mix in a large bowl until blended.
  • Step 3
    Do not peel potatoes. Cut them in half and then quarter each half.
  • Step 4
    Toss potatoes and shallot slices in the dressing mix until well coated. Season with salt and pepper.
  • Step 5
    Place in a baking dish, in a single layer. Bake 40 minutes, or until done.
