Got this recipe from a Swedish lady I met when I lived in New York. It's a different taste and a lovely side dish. Enjoy

Ingredients

  • 36 - new potatoes or fingerlings or any small size potatoes about 4 oz. each
  • 3 tablespoons butter
  • 5 tablespoons olive oil
  • - sea salt to taste

How To Make roasted fingerling or new potates by rose

  • Step 1
    Preheat oven to 400. Take your potatoes and cut small slits NOT ALL THE WAY THROUGH the potatoes. Heat up the butter and olive oil, remove from the heat and pour over the potatoes. Arrange on a baking dish cut side down first. Salt slightly, bake for 15 minutes. Turn to cut side up, gently, salt slightly, bake remaining 30 minutes until done and slightly crispy. Serve.
