The cheese in this really enhances the flavor of the potatoes. Sometimes I don't bother to peel the potatoes. It not only saves time and effort, but it adds a bit of texture and nutrition.

- 3 1/2 pounds potatoes, peeled
- 1 cup cheddar cheese, shredded
- 1/2 cup butter
- 1 teaspoon garlic powder
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 1/2 cups sour cream
- - chives, chopped
How To Make rich mashed potatoes

Step 1Cook potatoes in water to cover 25 -30 minutes until tender.

Step 2While still hot, mash roughly with potato masher and add cheese. Continue to mash until cheese is well incorporated.

Step 3Mash in butter, garlic powder, salt, and pepper.

Step 4Finally, add sour cream and mash or whip. If you desire your potatoes a bit thinner, add cream or milk until desired consistency. Reheat if necessary.

Step 5Serve with extra butter and a generous sprinkling of chives.
