Had red potatoes and wanted to make something different. My husband, not a potato lover, loved them.

  • 2 lb
    baby red potatoes
  • 1 stick
  • 2 c
    sharp cheddar cheese
  • 1 Tbsp
    kosher salt
  • 1 tsp
    ground pepper
  • 1 tsp
    garlic powder with parsley

How to Make Red Potato Casserole


  1. In a large pot cover whole potatoes with water and boil until soft, approximately 20 minutes.
  2. Using a potato masher smash potatoes just to big lumps add salt, pepper and garlic powder. Place in 9x13 glass casserole that has been sprayed with cooking spray. Grate butter over top.
  3. Cover with foil, bake 400 for 20 minutes. Remove foil, sprinkle on cheese. Bake additional 5 minutes uncovered.
