Had red potatoes and wanted to make something different. My husband, not a potato lover, loved them.

Ingredients

  • 2 pounds baby red potatoes
  • 1 stick butter
  • 2 cups sharp cheddar cheese
  • 1 tablespoon kosher salt
  • 1 teaspoon ground pepper
  • 1 teaspoon garlic powder with parsley

How To Make red potato casserole

  • Step 1
    In a large pot cover whole potatoes with water and boil until soft, approximately 20 minutes.
  • Step 2
    Using a potato masher smash potatoes just to big lumps add salt, pepper and garlic powder. Place in 9x13 glass casserole that has been sprayed with cooking spray. Grate butter over top.
  • Step 3
    Cover with foil, bake 400 for 20 minutes. Remove foil, sprinkle on cheese. Bake additional 5 minutes uncovered.
