Made crockpot scalloped potatoes and ham for dinner tonight. When my timer went off I went to check on them and was heart broken when I took the lid off. My cheese sauce was like water. I thought briefly about adding some cornstarch and water or flour and water but did not want cheese gravy or lumpy cheese sauce. The wheels started spinning and this is what I came up with.

instant potato flakes, dry


1Got soupy scalloped or Au Grating potatoes add some instant potato mix and stir in. Doesn't change the taste of the dish and no lumps. Add just enough to use as a thickening agent. I did this with crockpot scalloped potatoes. I am sure would work well with baked as well.
