purple tater crusted tilapia
I saw an episode on the Food Network not too long ago that caught my eye and tummy! I love fish and I love potatoes, so I just had to make it. This is my twist on that recipe. Cooking with Passion, sw :)

Ingredients
- 4 (6) ounces tilapia fillets
- 8 ounces purple potatoes, thinly sliced**i used a mandoline**
- 2 tablespoons lard
- 3 tablespoons olive oil, extra virgin...divided
- 1 teaspoon everglades seasoning
- 4 pinches course black pepper
- PARLSEY OIL
- 1/3 cup olive oil, extra virgin
- 1/4 cup italian parsley, chopped
- 1/4 teaspoon everglades seasoning
- - zest of one lemon
How To Make purple tater crusted tilapia

Step 1Season fish with everglades. Meanwhile combine parley oil ingredients in a small mixing bowl. Mix well and set aside

Step 2Add 1 tbsp of olive oil to potato slices. Place fish on a kitchen work surface. Completely cover fish with potatoe slices, overlaying them like roof shingles.

Step 3In a large heated cast iron skillet add lard and remaining oil. Gently add fish potato side down to the skillet. Fry for 3 minutes or until potatoes are golden brown. Gently flip fish over and fry for 2 minutes or until fish is completey done. Drizzle parsley oil on top of fish.
