potluck potato casserole
Every family has their own verson of this recipe. This is the one my family uses which I got from my Mother Joyce Walburn and she got from my father's Aunt Elma Edwards(Emo) from St. Louis Mo. Just about every family gathering, holiday you can count on this dish being on the table.

Ingredients
- 2 pounds hash brown potatoes, frozen
- 1/2 cup butter, melted
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup onion, chopped
- 1 can (10 3/4oz) cream of chicken soup
- 1 pint sour cream
- 2 cups sharp cheddar cheese, grated
- 2 cups corn flakes crushed with 1/4 cup melted butter
How To Make potluck potato casserole

Step 1Defrost potatoes. Combine in large mixing bowl with 1/2 cup butter, salt and pepper. Add onion, soup, sour cream, and cheese. Blend thoroughly. Pour into buttered casserole. Cover with crumbs. Bake at 350 degrees for 45 minutes.

Step 2NOTE: This can be prepared the day before, or if you want to serve only half the recipe, use 2 smaller dishes and freeze one. When frozen, remove from freezer 20 minutes before baking Add crumbs just before baking.
