potatoes with mustard sauce

I think this is a great potato recipe to have with barbecue or pork. The mustard sauce goes so well with either.

Ingredients

  • 2 pounds red potatoes, (about 3 or 4 potatoes)
  • 3 tablespoons onion, chopped
  • 3 tablespoons butter, melted
  • 1/4 cup all purpose flour
  • 2 cups chicken broth
  • 1 cup whipping cream
  • 3 tablespoons dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup soft breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon butter

How To Make potatoes with mustard sauce

  • Step 1
    Cook potatoes in boiling salted water to cover for 15 minutes. Drain and let cool slightly. Peel the potatoes and cut into 1/4 inch slices. Layer the potato slices in a greased 11 x 7 x 1 1/2 inch dish. Set aside.
  • Step 2
    Saute the chopped onions in 3 tablespoons butter in a medium saucepan over medium heat until tender. Reduce the heat to low. Add the flour, stirring well. Cook 1 minute, stirring constantly. Gradually add the broth and whipping cream; cook over medium heat, stirring constantly, until the mixture is slightly thickened and bubbly. Stir in the mustard, salt, and pepper.
  • Step 3
    Pour the sauce over the potatoes. Sprinkle with the soft breadcrumbs and Parmesan cheese. Dot with the butter.
  • Step 4
    Bake, uncovered, at 375° for 25 to 30 minutes or until the potato slices are tender.
