potatoes with mustard sauce
I think this is a great potato recipe to have with barbecue or pork. The mustard sauce goes so well with either.

Ingredients
- 2 pounds red potatoes, (about 3 or 4 potatoes)
- 3 tablespoons onion, chopped
- 3 tablespoons butter, melted
- 1/4 cup all purpose flour
- 2 cups chicken broth
- 1 cup whipping cream
- 3 tablespoons dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup soft breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 tablespoon butter
How To Make potatoes with mustard sauce

Step 1Cook potatoes in boiling salted water to cover for 15 minutes. Drain and let cool slightly. Peel the potatoes and cut into 1/4 inch slices. Layer the potato slices in a greased 11 x 7 x 1 1/2 inch dish. Set aside.

Step 2Saute the chopped onions in 3 tablespoons butter in a medium saucepan over medium heat until tender. Reduce the heat to low. Add the flour, stirring well. Cook 1 minute, stirring constantly. Gradually add the broth and whipping cream; cook over medium heat, stirring constantly, until the mixture is slightly thickened and bubbly. Stir in the mustard, salt, and pepper.

Step 3Pour the sauce over the potatoes. Sprinkle with the soft breadcrumbs and Parmesan cheese. Dot with the butter.

Step 4Bake, uncovered, at 375° for 25 to 30 minutes or until the potato slices are tender.
