Ingredients
- 2 medium yukon gold potatoes
- 1/2 small shallot, minced
- 1/3 cup heavy whipping cream
- 1/4 cup grated parmesan cheese
- 3 - chives, minced (or green onion tops)
- 3/4 teaspoon kosher salt
- - freshly ground pepper to taste
How To Make potatoes dauphinoise

Step 1Preheat oven to 400 degrees. Scrub potatoes and slice into 1/4" thick rounds. Boil in lightly salted water until softened, but not cooked through. 10 - 12 minutes

Step 2strain and return to pot. Add cream, half the Parmesan, chives, shallots and salt and pepper. Stir gently to mix and transfer to small (6") cast iron skillet.

Step 3Top with remaining Parmesan and bake until cheese browns, 15 - 18 minutes.
