Ingredients For potatoes dauphinoise

2 mdyukon gold potatoes

1/2 smshallot, minced

1/3 cheavy whipping cream

1/4 cgrated parmesan cheese

3chives, minced (or green onion tops)

3/4 tspkosher salt

freshly ground pepper to taste
How To Make potatoes dauphinoise

1Preheat oven to 400 degrees. Scrub potatoes and slice into 1/4" thick rounds. Boil in lightly salted water until softened, but not cooked through. 10 - 12 minutes

2strain and return to pot. Add cream, half the Parmesan, chives, shallots and salt and pepper. Stir gently to mix and transfer to small (6") cast iron skillet.

3Top with remaining Parmesan and bake until cheese browns, 15 - 18 minutes.
