Ingredients For potatoes dauphinoise
yukon gold potatoes
heavy whipping cream
grated parmesan cheese
chives, minced (or green onion tops)
freshly ground pepper to taste
How To Make potatoes dauphinoise
Preheat oven to 400 degrees.
Scrub potatoes and slice into 1/4" thick rounds.
Boil in lightly salted water until softened, but not cooked through. 10 - 12 minutes
strain and return to pot. Add cream, half the Parmesan, chives, shallots and salt and pepper. Stir gently to mix and transfer to small (6") cast iron skillet.
Top with remaining Parmesan and bake until cheese browns, 15 - 18 minutes.
