Very decadent, yet simple to make French potatoes.

Ingredients

  • 2 medium yukon gold potatoes
  • 1/2 small shallot, minced
  • 1/3 cup heavy whipping cream
  • 1/4 cup grated parmesan cheese
  • 3 - chives, minced (or green onion tops)
  • 3/4 teaspoon kosher salt
  • - freshly ground pepper to taste

How To Make potatoes dauphinoise

  • Step 1
    Preheat oven to 400 degrees. Scrub potatoes and slice into 1/4" thick rounds. Boil in lightly salted water until softened, but not cooked through. 10 - 12 minutes
  • Step 2
    strain and return to pot. Add cream, half the Parmesan, chives, shallots and salt and pepper. Stir gently to mix and transfer to small (6") cast iron skillet.
  • Step 3
    Top with remaining Parmesan and bake until cheese browns, 15 - 18 minutes.
