potato pancakes with grated vegetables

My Irish husband loves potatoes in any form, but hates vegetables. This is something I made up to get both into him in a way he loves!

Ingredients
- 3/4 to 1 cups whole grain pancake/waffle mix
- 1 small zucchini squash grated (minus the seeds)
- 1 small yellow squash grated (minus the seeds)
- 1 large carrot grated
- 1 small onions, white grated or 2 chopped scallions including green part
- 1 - egg lightly beaten
- 24 0unced packages pre-made mashed potato (plain) found in refrigerated section of store. i like bob evans brand
How To Make potato pancakes with grated vegetables

Step 1Mix the above ingredients together in a bowl,(you can add small amounts of pancake mix if product is too wet and does not hold together) Let mixture sit for 15 minutes to firm up to a VERY soft cookie dough consistency.

Step 2Heat olive oil and 1 tsp of butter to frying pain and when hot drop 1 large tsp of mix into pan. Flatten lightly to level of a thin pancake. After 1 to 2 minutes flip over when nicely browned.

Step 3Remove and drain on paper towels. Add more butter /oil mix to pan as needed and finish frying the dough. These freeze beautifully and just reheat in the microwave for later use.
