Ingredients
- 2 tablespoons canola oil
- 3-1/2 pounds chuck roast
- 1 - onion, halved, cut into 1/4"-slices
- 5 teaspoons minced garlic
- 2 pounds small yukon potatoes
- 2 packages dry onion soup mix
- 1/2 teaspoon pepper
- 2 cans reduced-fat cream of mushroom soup
- 1 - 14-1/2 oz can beef broth
- 1/2 cup light sour cream
How To Make pot roast w/ smashed potatoes

Step 1In lg dutch oven, heat oil over med-high heat. Brown meat on all sides. Add onion. Cook, stirring for 5 mins. Add garlic, cook 1 min.

Step 2Place meat and onion mix to a lg slow-cooker. Add remaining ingredients, except sour cream. Cover, cook on low for 4-1/2 hrs.

Step 3Remove meat to cutting board. Remove potatoes to a lg bowl. Add sour cream to bowl. Smash potatoes w/ a wooden spoon. Season to taste. Slice beef and serve w/ broth.
