Ingredients For pot roast w/ smashed potatoes

  • 2 Tbsp
    canola oil
  • 3-1/2 lb
    chuck roast
  • 1
    onion, halved, cut into 1/4"-slices
  • 5 tsp
    minced garlic
  • 2 lb
    small yukon potatoes
  • 2 pkg
    dry onion soup mix
  • 1/2 tsp
  • 2 can
    reduced-fat cream of mushroom soup
  • 1
    14-1/2 oz can beef broth
  • 1/2 c
    light sour cream

How To Make pot roast w/ smashed potatoes

    In lg dutch oven, heat oil over med-high heat. Brown meat on all sides. Add onion. Cook, stirring for 5 mins. Add garlic, cook 1 min.

    Place meat and onion mix to a lg slow-cooker. Add remaining ingredients, except sour cream. Cover, cook on low for 4-1/2 hrs.

    Remove meat to cutting board. Remove potatoes to a lg bowl. Add sour cream to bowl. Smash potatoes w/ a wooden spoon. Season to taste. Slice beef and serve w/ broth.
