One of my dads great recipes.

2 Tbsp
canola oil
3-1/2 lb
chuck roast
onion, halved, cut into 1/4"-slices
5 tsp
minced garlic
2 lb
small yukon potatoes
2 pkg
dry onion soup mix
1/2 tsp
2 can(s)
reduced-fat cream of mushroom soup
14-1/2 oz can beef broth
1/2 c
light sour cream


1In lg dutch oven, heat oil over med-high heat. Brown meat on all sides. Add onion. Cook, stirring for 5 mins. Add garlic, cook 1 min.
2Place meat and onion mix to a lg slow-cooker. Add remaining ingredients, except sour cream. Cover, cook on low for 4-1/2 hrs.
3Remove meat to cutting board. Remove potatoes to a lg bowl. Add sour cream to bowl. Smash potatoes w/ a wooden spoon. Season to taste. Slice beef and serve w/ broth.
