pot luck potatoes
In my quest to make a quick, easy side dish, I did a pantry and fridge raid and this is what I came up with. Leftover veggies from pizza and some red potaotes, and pepperjack cheese. A delicious combo.

Ingredients
- 6 slices red potatoes
- 2 medium portabello mushrooms, sliced
- 1/2 cup green bell, sliced
- 1/4 cup red onion, sliced
- 4 ounces pepperjack cheese, grated
- 1/2 teaspoon granulated garlic
- 1 teaspoon mrs. dash original blend
- pinch red pepper flakes
- 1 tablespoon olive oil
How To Make pot luck potatoes

Step 1Slice red potatoes, skin on, very thinly into rounds. Place in bowl and drizzle with olive oil. Make sure each individual potato round is coated.

Step 2Place in non stick skillet, add onion and bell pepper, seasonings. Cover and cook on med-low, turning often till potatoes are tender. About 10 min before end of cooking, add mushrooms.

Step 3Turn off heat, sprinkle on grated cheese and allow to melt.
