Ingredients

  • 1 package breakfast pork chops (thin)
  • 1 pound red or yukon gold potatoes, dices
  • 1 can rotel regular diced tomatoes & chilis
  • 3 tablespoons flour for dusting chops for roux (thickening)
  • 1 medium yellow onion, chopped & sauteed
  • 2 teaspoons garlic, minced
  • 1 box chicken broth
  • 1 tablespoon cumin powder
  • 1 tablespoon chili powder

How To Make pork piccadillo

  • Step 1
    Rinse chops, dice & dust with flour. Set aside. Saute onions & garlic in olive oil. Add pork including bones for full flavor. Add potatoes, Rotel, diced potatoes, seasoning & cover with chicken broth. Bring to a boil then simmer for about 1 hour.
  • Step 2
    We like ours either with warm flour tortillas or served over Spanish rice. So delicious & you can adjust the seasoning for kids so it's not as spicy.
