  • 1 pkg
    breakfast pork chops (thin)
  • 1 lb
red or yukon gold potatoes, dices
  • 1 can(s)
rotel regular diced tomatoes & chilis
  • 3 Tbsp
flour for dusting chops for roux (thickening)
  • 1 medium
    yellow onion, chopped & sauteed
  • 2 tsp
    garlic, minced
  • 1 box
    chicken broth
  • 1 Tbsp
    cumin powder
  • 1 Tbsp
    chili powder

How to Make Pork Piccadillo

  1. Rinse chops, dice & dust with flour. Set aside. Saute onions & garlic in olive oil. Add pork including bones for full flavor. Add potatoes, Rotel, diced potatoes, seasoning & cover with chicken broth. Bring to a boil then simmer for about 1 hour.
  2. We like ours either with warm flour tortillas or served over Spanish rice. So delicious & you can adjust the seasoning for kids so it's not as spicy.
