Ingredients
- 1 package breakfast pork chops (thin)
- 1 pound red or yukon gold potatoes, dices
- 1 can rotel regular diced tomatoes & chilis
- 3 tablespoons flour for dusting chops for roux (thickening)
- 1 medium yellow onion, chopped & sauteed
- 2 teaspoons garlic, minced
- 1 box chicken broth
- 1 tablespoon cumin powder
- 1 tablespoon chili powder
How To Make pork piccadillo

Step 1Rinse chops, dice & dust with flour. Set aside. Saute onions & garlic in olive oil. Add pork including bones for full flavor. Add potatoes, Rotel, diced potatoes, seasoning & cover with chicken broth. Bring to a boil then simmer for about 1 hour.

Step 2We like ours either with warm flour tortillas or served over Spanish rice. So delicious & you can adjust the seasoning for kids so it's not as spicy.
