Ingredients For pork piccadillo

1 pkgbreakfast pork chops (thin)

1 lbred or yukon gold potatoes, dices

1 canrotel regular diced tomatoes & chilis

3 Tbspflour for dusting chops for roux (thickening)

1 mdyellow onion, chopped & sauteed

2 tspgarlic, minced
-
1 boxchicken broth
-
1 Tbspcumin powder
-
1 Tbspchili powder
How To Make pork piccadillo

1Rinse chops, dice & dust with flour. Set aside. Saute onions & garlic in olive oil. Add pork including bones for full flavor. Add potatoes, Rotel, diced potatoes, seasoning & cover with chicken broth. Bring to a boil then simmer for about 1 hour.

2We like ours either with warm flour tortillas or served over Spanish rice. So delicious & you can adjust the seasoning for kids so it's not as spicy.
