Since I have been on Weight Watchers, I have been making these mashed potatoes for my family. For 1 cup, there is a 5 ppv. And they are very delicious.

Ingredients
- 3 pounds yukon gold potatoes, washed and quartered.
- 1 1/2 cups reduced fat shredded sharp cheddar cheese.
- 3/4 cup nonfat or light buttermilk.
- 1/2 teaspoon ground pepper.
- - salt to taste.
- - chopped chives to your likening.

Step 1Place potatoes in a pot. Add enough water to cover. Cooked until potatoes are tender.

Step 2Drain.

Step 3Mash with a potato masher.

Step 4Stir in the cheese until melted.

Step 5Add the buttermilk, salt, pepper and chives. Combine.

Step 6Makes 8 servings. (1 cup each)
