This is a simple recipe, yet really good. My mom used to make parsley potatoes when I was a little kid. They were ok, but this recipe is even better than hers.

Ingredients

3 lb
small red new potatoes
1/2 stick
butter or margarine
1/4 tsp
salt
pepper, to taste
3 Tbsp
dried or fresh parsley
1/2 tsp
dried or fresh thyme

How to Make Parsley New Potatoes

Step-by-Step

  • 1Boil the potatoes, whole, in a large pot of water. Bring to boiling. Cook for 15 minutes or until fork-tender, then drain. (I don't peel the potatoes.)
  • 2Cut the potatoes in half and place them in a large bowl.
  • 3Drizzle the melted butter over them, and then add salt, pepper, parsley and thyme. Toss to coat potatoes evenly, and serve.
