This is a simple recipe, yet really good. My mom used to make parsley potatoes when I was a little kid. They were ok, but this recipe is even better than hers.

Ingredients

Add to Grocery List

  • 3 lb
    small red new potatoes
  • 1/2 stick
    butter or margarine
  • 1/4 tsp
    salt
  • ·
    pepper, to taste
  • 3 Tbsp
    dried or fresh parsley
  • 1/2 tsp
    dried or fresh thyme

How to Make Parsley New Potatoes

Step-by-Step

  1. Boil the potatoes, whole, in a large pot of water. Bring to boiling. Cook for 15 minutes or until fork-tender, then drain. (I don't peel the potatoes.)
  2. Cut the potatoes in half and place them in a large bowl.
  3. Drizzle the melted butter over them, and then add salt, pepper, parsley and thyme. Toss to coat potatoes evenly, and serve.
