Parsley New Potatoes

Ingredients

3 lbsmall red new potatoes

1/2 stickbutter or margarine

1/4 tspsalt
-
·pepper, to taste

3 Tbspdried or fresh parsley
-
1/2 tspdried or fresh thyme
How to Make Parsley New Potatoes
- Boil the potatoes, whole, in a large pot of water. Bring to boiling. Cook for 15 minutes or until fork-tender, then drain. (I don't peel the potatoes.)
- Cut the potatoes in half and place them in a large bowl.
- Drizzle the melted butter over them, and then add salt, pepper, parsley and thyme. Toss to coat potatoes evenly, and serve.
