parsley new potatoes
This is a simple recipe, yet really good. My mom used to make parsley potatoes when I was a little kid. They were ok, but this recipe is even better than hers.

Ingredients
- 3 pounds small red new potatoes
- 1/2 stick butter or margarine
- 1/4 teaspoon salt
- - pepper, to taste
- 3 tablespoons dried or fresh parsley
- 1/2 teaspoon dried or fresh thyme
How To Make parsley new potatoes

Step 1Boil the potatoes, whole, in a large pot of water. Bring to boiling. Cook for 15 minutes or until fork-tender, then drain. (I don't peel the potatoes.)

Step 2Cut the potatoes in half and place them in a large bowl.

Step 3Drizzle the melted butter over them, and then add salt, pepper, parsley and thyme. Toss to coat potatoes evenly, and serve.
