pandemic potato salad!

As you can tell by the title, I had to come up with a side dish with the ingredients that I had in the house. I love the fresh tangy flavor! I have had to really become creative at this trying time! I am elderly with a serious lung condition so I don't leave my house and depend on others to shop for me. Please stay safe all my JAP peeps!

Ingredients

  • 6 large potatos cooked and sliced
  • 1/3 cup seasoned rice vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon coarse ground pepper
  • 1 cup cilantro leaves
  • 6 whole green onions chopped
  • 1/2 cup chopped black olives
  • 2/3 cup sour cream
  • 11/2 teaspoons salt

How To Make pandemic potato salad!

  • Step 1
    Pour vinegar, lemon juice, black pepper and salt on potatoes. Let sit for ten minutes.
  • Step 2
    Add the remainder of ingredients and refrigerate till ready to serve.
  • Step 3
    Garnish with cilantro and black olives.
