  • 2 Tbsp
    grated fresh ginger
  • 3-4
    sweet potatoes
  • 1/2 can(s)
    frozen orange juice concentrate
  • ·
    optional ( 2 t triple sec)
  • 2 tsp
  • 1 stick
  • 1 Tbsp
    brown sugar

How to Make Orange Ginger Sweet Potatoes


  1. Peel and slice sweet potatoes in approx. 1/4 inch slices.
  2. In a large deep (approx 3-4") skillet add 1/2 can orange juice concentrate and grated ginger on medium heat and simmer for about 5 minutes
  3. Add sweet potatoes , sugar, butter, salt and triple sec if you have it. Stir and cover. Cook covered for about 20-30 minutes stirring occasionally until potatoes are tender...
  4. Once potatoes are tender mash and serve.

    **serving suggestion*** put the mashed orange ginger sweet potatoes in a casserole dish and top with slivered almonds.
