This recipe incorporates some of my favorite flavors. Potatoes are eaten by just about everyone and with the roast garlic and olive oil it makes for a winning combination at my house.

Ingredients
- 1/4 cup olive oil
- 16 small new potatoes
- 2 - heads garlic, cloves separated but not peeled
- - sea salt and fresh ground pepper to taste
- 2 tablespoons fresh parsley, chopped
How To Make new potatoes with roasted garlic

Step 1Preheat your oven to 400° F.

Step 2In a heavy skillet, heat the oil and brown the potatoes on all sides.

Step 3Transfer the oil and potatoes to a casserole dish and add the garlic cloves. Stir to coat the cloves with oil. Bake for about 30 minutes or until the potatoes and garlic are tender.

Step 4Remove from the oven and season with salt and pepper to taste. Sprinkle with parsley and serve.

Step 5Note: Just squeeze the garlic out of their skins onto your potatoes.
