This is so easy, pop it into the oven and enjoy!l It's a lovely recipe and has stood the test of time. It tastes as great today as it did years ago. A tasty side dish that will impress your guests or picky family members. Best of all this quick and easy to make recipe, uses leftover mashed potatoes and can easily be doubled or tripled. Don't forget to add butter, cream, salt and pepper to the potatoes if making fresh mashed potatoes. For those of you who want more, try these great additions; garlic, caramelized onions, fried mushrooms, fresh herbs, crumbled bacon, or different cheeses.

Ingredients For my version of shaker potatoes

  • 2 c
    leftover mashed potatoes
  • 1 c
    aged or extra aged cheddar cheese, cubed
  • 1 md
    sweet onion, coarsely minced
  • 1/4 c
    Italian bread crumbs
  • 4 1/2 Tbsp
    shredded Parmesan cheese
  • 1/2 tsp
    salt
  • 1/4 tsp
    fresh ground black pepper
  • 5 Tbsp
    butter, cubed
  • 1/8 bunch
    fresh parsley, minced, for garnish

How To Make my version of shaker potatoes

    Preheat oven to 350 degrees F.
  • 2
    Spread the mashed potatoes evenly into a buttered glass pan.
  • 3
    Push the cheese cubes down into the potatoes, then cover with the onion.
  • 4
    Sprinkle on the bread crumbs and then the shredded parmesan cheese. Season with the salt and pepper and top with the butter cubes.

    Bake for 45 - 55 minutes.
