Ingredients
- 4 1/2 pounds sweet potatoes
- 1 cup brown sugar
- 1/4 cup half and half
- 1/2 cup butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/4 cups cornflakes, crushed
- 1/4 cup pecans, chopped
- 1 tablespoon brown sugar
- 1 tablespoon butter, melted
- 1 1/2 cups miniature marshmallows
How To Make my favorite holiday sweet potato casserole

Step 1Preheat oven to 400 degrees F. Bake sweet potatoes for about 1 hour until tender. Let cool to touch; peel and mash potatoes.

Step 2Beat mashed potatoes, sugar and next 5 ingredients (half and half through salt) at medium speed with an electric mixer until smooth. Spoon potato mixture into a greased 11 x 7 inch baking dish.

Step 3Combine crushed cornflakes and next 3 ingredients in a small bowl. Sprinkle diagonally over casserole in rolls 2 inches apart (leave enough room for a layer of marshmallows).

Step 4Bake at 350 degrees for 30 minutes. Remove from oven and let stand 10 minutes. Sprinkle alternate rows with marshmallows and bake an additional 10 minutes. Let stand 10 minutes before serving.
