This sweet potato casserole provides two different toppings; allowing your family a choice of two deliciously different versions. It makes a beautiful presentation as well. I have been serving this casserole for years and I always get rave reviews. Cook time includes baking time for potatoes

Ingredients

  • 4 1/2 pounds sweet potatoes
  • 1 cup brown sugar
  • 1/4 cup half and half
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/4 cups cornflakes, crushed
  • 1/4 cup pecans, chopped
  • 1 tablespoon brown sugar
  • 1 tablespoon butter, melted
  • 1 1/2 cups miniature marshmallows

How To Make my favorite holiday sweet potato casserole

  • Step 1
    Preheat oven to 400 degrees F. Bake sweet potatoes for about 1 hour until tender. Let cool to touch; peel and mash potatoes.
  • Step 2
    Beat mashed potatoes, sugar and next 5 ingredients (half and half through salt) at medium speed with an electric mixer until smooth. Spoon potato mixture into a greased 11 x 7 inch baking dish.
  • Step 3
    Combine crushed cornflakes and next 3 ingredients in a small bowl. Sprinkle diagonally over casserole in rolls 2 inches apart (leave enough room for a layer of marshmallows).
  • Step 4
    Bake at 350 degrees for 30 minutes. Remove from oven and let stand 10 minutes. Sprinkle alternate rows with marshmallows and bake an additional 10 minutes. Let stand 10 minutes before serving.
