  • - leftover or fresh baked potato(es)
  • - lean taco meat
  • - canned or homemade enchilada sauce
  • - 2% cheddar cheese, shredded
  • - red onion chopped, or pico de gallo
  • - light sour cream

How To Make mexican baked potato

  • Step 1
    Slice, dice, cube or smash baked potato on plate, top with taco meat, cheese, diced onion, and drizzle on enchilada sauce. Pop into micro for 2-3 min. Garnish with sour cream. Other good garnishes would be diced tomatoes, pico de gallo, salsa verde, red salsa.
