  • ·
    leftover or fresh baked potato(es)
  • ·
    lean taco meat
  • ·
    canned or homemade enchilada sauce
  • ·
    2% cheddar cheese, shredded
  • ·
    red onion chopped, or pico de gallo
  • ·
    light sour cream

How to Make Mexican Baked Potato

Step-by-Step

  1. Slice, dice, cube or smash baked potato on plate, top with taco meat, cheese, diced onion, and drizzle on enchilada sauce. Pop into micro for 2-3 min. Garnish with sour cream.

    Other good garnishes would be diced tomatoes, pico de gallo, salsa verde, red salsa.
