meatloaf and mashed potatoes

I've made this for my family and they all loved it. No one noticed I had the cauliflower mixed in with the potatoes. It's great for getting kids to eat vegetables...ok adults too. :)

Ingredients
- - meatloaf
- 1 pound lean ground turkey or beef
- 1 small onion, chopped
- 1/2 cup low-carb bbq sauce
- 1/2 cup uncooked oats
- 1 medium tomato puree
- 3 - egg whites
- 1/2 teaspoon cumin
- 1 small can green chili peppers, undrained
- 1 teaspoon fresh garlic, minced
- 1 teaspoon black pepper
- 1 teaspoon mexican blend seasoning
- - non-stick cooking spray
- - mashed potatoes
- 2 cups potatoes
- 2 cups cauliflower, small florets
- 3 tablespoons smart balanace buttery spread
- 1/2 cup plain non-fat yogurt
- 1/4 cup original soy milk or skim milk upto 1/2 cup
- pinch salt
- pinch freshly ground black pepper

Step 2Preheat oven to 400 degrees. Mix all ingredients in a large bowl. Shape into a loaf and place in a baking pan that has been lightly sprayed with cooking spray. Bake for one hour. Great for meatballs and turkey burgers too.

Step 3Mashed Potatoes

Step 4Steam cauliflower and boil potatoes until soft. Blend with a mixer or puree in a food processor, depending on the consistency you prefer. Add the rest of the ingredients and mix well.
