We love mashed potatoes at our house and I usually make them with chicken broth but this weekend I didn't have any. So I used vegetable broth not really knowing what I would end up with. These are the best mashed potatoes we have ever had. I hope you think so too.

Ingredients

  • 3 pounds peeled russet potatoes
  • 1 cup vegetable stock , varies (don't make too wet)
  • 6 tablespoons butter
  • - salt and pepper

How To Make mashed potatoes holiday style

  • Step 1
    Peel, quarter and boil potatoes in salted water until tender.
  • Step 2
    Drain potatoes and mash by hand. (There is just nothing like hand mashed potatoes)
  • Step 3
    Add vegetable broth a little at a time. Add about 1 tablespoon of butter per pound of potatoes. Salt and pepper to taste.
