Mashed Potatoes and Carrots

I found an old cookbook - not that old, published 2003. It's called "The Diabetic FOUR-Ingredient Cookbook." Written by a couple of nutritionists, it has some easy and interesting recipes in it.
I thought some of these recipes might be what some of us weight watchers and carb watchers are looking for.
Once I have tried them, I will post a photograph and comments.

4 medium
potatoes, peeled and cut into chunks
1 large
carrot, peeled and cut into chunks
1/3 c
skim milk
1 tsp
dried dill leaves

How to Make Mashed Potatoes and Carrots


  • 1In boiling water, add potatoes and carrot and cook for 25 minutes or until tender. Drain. Return to pot and mash. Stir in milk and dill.
  • 2Per 1/2-cup serving:
    calories - 79
    fat, sat fat, cholesterol - 0g
    sodium - 17 mg
    protein - 2g
    carbohydrate - 18g
    fiber - 1g
  • 3Diabetic Exchanges:
    1/2 vegetable, 1 starch
