mashed potatoes and carrots
I found an old cookbook - not that old, published 2003. It's called "The Diabetic FOUR-Ingredient Cookbook." Written by a couple of nutritionists, it has some easy and interesting recipes in it. I thought some of these recipes might be what some of us weight watchers and carb watchers are looking for. Once I have tried them, I will post a photograph and comments.

Ingredients
- 4 medium potatoes, peeled and cut into chunks
- 1 large carrot, peeled and cut into chunks
- 1/3 cup skim milk
- 1 teaspoon dried dill leaves
How To Make mashed potatoes and carrots

Step 1In boiling water, add potatoes and carrot and cook for 25 minutes or until tender. Drain. Return to pot and mash. Stir in milk and dill.

Step 2Per 1/2-cup serving: calories - 79 fat, sat fat, cholesterol - 0g sodium - 17 mg protein - 2g carbohydrate - 18g fiber - 1g
