mashed potatoes and carrots

I found an old cookbook - not that old, published 2003. It's called "The Diabetic FOUR-Ingredient Cookbook." Written by a couple of nutritionists, it has some easy and interesting recipes in it. I thought some of these recipes might be what some of us weight watchers and carb watchers are looking for. Once I have tried them, I will post a photograph and comments.

Ingredients

  • 4 medium potatoes, peeled and cut into chunks
  • 1 large carrot, peeled and cut into chunks
  • 1/3 cup skim milk
  • 1 teaspoon dried dill leaves

How To Make mashed potatoes and carrots

  • Step 1
    In boiling water, add potatoes and carrot and cook for 25 minutes or until tender. Drain. Return to pot and mash. Stir in milk and dill.
  • Step 2
    Per 1/2-cup serving: calories - 79 fat, sat fat, cholesterol - 0g sodium - 17 mg protein - 2g carbohydrate - 18g fiber - 1g
  • Step 3
    Diabetic Exchanges: 1/2 vegetable, 1 starch
