  • 1 tsp
    salt
  • 2
    eggs, beaten
  • 1 c
    milk
  • 4 Tbsp
    maple syrup
  • 1 tsp
    nutmeg

How to Make Gluten-Free Mashed Potato Pancakes

Step-by-Step

  1. Combine potatoes, pancake mix and salt.
  2. Mix together the eggs and milk and stir lightly into the potato-flour mixture.
  3. Add syrup and nutmeg and beat well.
  4. Bake on a greased griddle until cakes are brown on both sides.
