mashed potato & cheese perogies

These are a favorite in my house! I make tons of them and they dissapear instantly! I serve them with beef (brown) gravy and the family just gobbles them right up and wants more!

Ingredients

  • PEROGIE DOUGH
  • 8 cups flour
  • 2 teaspoons salt
  • 2 tablespoons butter, softened
  • 3 cups warm water
  • FILLING
  • 6 medium potatoes
  • 2-3 cups shredded cheddar cheese
  • 1 small onion
  • 1 tablespoon minced garlic
  • 1 stick butter, softened
  • - oil for frying

How To Make mashed potato & cheese perogies

  • Step 1
    Combine all dough ingredients until mixed thoroughly, cover and set aside.
  • Step 2
    Fry onions and garlic in butter until tender. Peel, dice, boil and mash potatoes with butter and onions when cooled, add cheese and mix well
  • Step 3
    roll out dough and cut with edge of glass as you would biscuits. reroll out each biscuit until very thin and fill with 1 teaspoon full of potato mixture. fold in half over potato mixture and seal with fingers or edge of fork. Set on floured pan
  • Step 4
    Drop each perogie into boiling water 4-6 at a time, when they float to the top they are done, set on buttered pan.
  • Step 5
    place in frying oil for about 1 minute per side. As you can see they should not be browned much or at all!
  • Step 6
    Serve with brown gravy and enjoy! Thank you Jesus for cooking with me today :0)
