Not sure where I got this recipe from, I know I have been making these for about 30 years.

Ingredients
- 2 cups leftover mashed potatoes
- 3/4 cup flour
- 1/2 - onion, diced
- - oil for frying
- 2 - eggs, beaten
- - salt and pepper to taste
How To Make mashed potato cakes

Step 1Heat oil in skillet, I love to use my cast iron for these. Combine all except flour. Add flour a little at a time until a somewhat stiff dough is formed. Drop by spoonfuls into hot oil and fry til brown on both sides. Repeat as necessary. You may have to add more oil to pan.
