Not sure where I got this recipe from, I know I have been making these for about 30 years.

Ingredients

  • 2 cups leftover mashed potatoes
  • 3/4 cup flour
  • 1/2 - onion, diced
  • - oil for frying
  • 2 - eggs, beaten
  • - salt and pepper to taste

How To Make mashed potato cakes

  • Step 1
    Heat oil in skillet, I love to use my cast iron for these. Combine all except flour. Add flour a little at a time until a somewhat stiff dough is formed. Drop by spoonfuls into hot oil and fry til brown on both sides. Repeat as necessary. You may have to add more oil to pan.
