2 cleftover mashed potatoes
-
3/4 cflour
-
1/2onion, diced
-
·oil for frying
-
2eggs, beaten
-
·salt and pepper to taste
How to Make Mashed Potato Cakes
- Heat oil in skillet, I love to use my cast iron for these. Combine all except flour. Add flour a little at a time until a somewhat stiff dough is formed. Drop by spoonfuls into hot oil and fry til brown on both sides. Repeat as necessary. You may have to add more oil to pan.
