Not sure where I got this recipe from, I know I have been making these for about 30 years.

  • 2 c
    leftover mashed potatoes
  • 3/4 c
    flour
  • 1/2
    onion, diced
  • ·
    oil for frying
  • 2
    eggs, beaten
  • ·
    salt and pepper to taste

How to Make Mashed Potato Cakes

Step-by-Step

  1. Heat oil in skillet, I love to use my cast iron for these. Combine all except flour. Add flour a little at a time until a somewhat stiff dough is formed. Drop by spoonfuls into hot oil and fry til brown on both sides. Repeat as necessary. You may have to add more oil to pan.
