mary's pancetta & chive potato au gratin sammie
I made this dish for one of my homeowners. They were having having a dinner party for some friends. The photo is an individual portion for my tasting. I posted the photo of this dish on my FB. My friend Mary thought it was a sandwich...thus the name. It really does look like the perfect little potato sammie. LOL I hope you enjoy. This a the perfect side dish for Easter. Ingredients
- 5-6 large yukon gold potatoes
- 1/2 pound pancetta, chopped & cooked
- 3/4 bunch fresh chives, snipped
- 2 cups shredded cheese blend
- 1/2 cup parmesan cheese, shaved
- 3 large garlic cloves, grated
- 3 cups half and half (more if needed)
- 3 large egg yolk, whisked
- 1 tablespoon everglades seasoning (season salt of choice)
- 1 pinch nutmeg
- 1 teaspoon white pepper
- 1 stick butter, unsalted divided

Step 1slice potatoes 1/8 inch thick

Step 2In a medium-size saucepan, melt 3/4 of the butter r over medium heat. stir in hal & half. add the garlic, everglades, pepper, nutmeg and stir constantly with a whisk for about a minute or so. slowly add egg and whisk away**you do not want to make scrambled eggs**. simmer for about 1 minute. remove from heat

Step 3butter your casserole dish. layer potatoes, cheese pancetta and chives. repeat 2 more times.

Step 4pour mixture over the potatoes and cover the dish with oiled aluminum foil.

Step 5meanwhile, preheat oven to 375 degrees. bake for about 45 minutes. uncover and bake for an additional 30 minutes or so. remove from oven at allow to rest for at least 20 minute.

Step 6this is my individual serving i cooked in an oblong ramekin dish...
