Maple Glazed Sweet Potatoes with Coconut

This recipe is a combination of two different recipes. I love the maple syrup sweet potatoes but it needed something. I went in search and found this wonderful coconut topping that works so well.
Although this is a side dish you would never know it was not dessert.
You will need to keep in mind that the butter must be butter as called for in the recipe.

Ingredients

1 1/2 lbcanned sweet potatoes or yams (2 15 oz cans)

1/2 cmaple syrup

1/2 corange juice
-
3 Tbspbutter, must be butter

1 tspcorn starch

1 tspgrated orange peel
-
TOPPING
-
1 cchopped pecans
-
1 cflaked coconut
-
1 cbrown sugar
-
1/4 cflour
How to Make Maple Glazed Sweet Potatoes with Coconut
- Preheat oven to 350 degrees Arrange sweet potatoes in 1 1/2 quart shallow baking dish.
- Combine remaining ingredients; pour over potatoes.
- Bake 20 minutes or until hot and sauce is thickened, basting frequently.
- Mix topping ingredient together until crumbly and sprinkle over the top after the 20 minutes and bake for 20 more minutes.
