Mediterranean style roasted potatoes from the island of Malta (Patata I-Forn).

Ingredients

  • 4 - russet potatoes
  • 1 large onion
  • 2 teaspoons minced garlic
  • 2 sprigs fresh rosemary leaves, minced
  • - salt and pepper
  • 1/4 cup olive oil

How To Make maltese roasted potatoes

  • Step 1
    Preheat oven to 350F.
  • Step 2
    Peel potatoes and onions and thinly slice on a mandoline or by hand.
  • Step 3
    Layer potatoes on the bottom of a well greased casserole dish.
  • Step 4
    Top potatoes with thinly sliced onions, garlic, rosemary, salt and black pepper.
  • Step 5
    Drizzle with olive oil and 2 tablespoons water.
  • Step 6
    Bake for 45 minutes, turning potatoes halfway through cooking and continuing to bake until potatoes are tender.
