TRYIN SOMETHIN A LITTLE DIFFERENT..THE POTATOES ARE NOW READY FOR THE 2ND COOKIN...WILL GO IN OVEN WHEN RIBS COME OUT..........THEY LOOK AND SMELL REALLY GOOD.....PIC AS SOON AS I CAN GET IT OFF PHONE CAMERA....

Ingredients

  • 2 large baking potatoes
  • 8-10 small little smokies smoked sausage links
  • 4 ounces sliced mushrooms,chopped
  • 1 tablespoon butter
  • 2 + tablespoons light sour cream
  • 1 tablespoon parmesan cheese
  • 2 ounces finely shredded sharp cheese
  • - salt and pepper to taste

How To Make loaded potatoes

  • Step 1
    bake both potatoes til fork tender[i used microwave,cooked both 8 min] cool til u can handle them...20 min or so
  • Step 2
    while potatoes bake spray small fry pan with non stick spray cut smokies into small pieces cook and stir til browned add sliced mushrooms that have been broken into small pieces fry bout 10 min
  • Step 3
    now cut potatoes in 1/2 lengthwise scoop tater out leavin skin in tack.... mash tater with butter and sour cream
  • Step 4
    now add smokies,cheeses, add salt and pepper mound up high add mound of sour cream to top set aside till rest of meal is bout ready put back in micro nuke til cheese melts and tater is hot
  • Step 5
    now enjoy........... we had this with b'bqued ribs and a tossed salad........
