Ingredients
- 2 tablespoons pure maple syrup
- 2 tablespoons dark brown sugar
- 2 tablespoons unsalted butter, melted
- 2 tablespoons oil (your choice - coconut oil sounds great)
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- pinch of cayenne pepper
- 4 pounds sweet potatoes, peeled and cut into 1 inch cubes
- zest of 3 limes (less or more to suit your tastes)
How To Make lime-zested maple roasted sweet potatoes

Step 1Preheat the oven to 350 degrees F.

Step 2In a large bowl, mix together the maple syrup, brown sugar, butter, oil, salt, cinnamon and cayenne pepper.

Step 3Add sweet potatoes and toss until thoroughly coated. Transfer the potatoes to a baking sheet. (Hint - if you preheat the pan, your potatoes will not stick). Roast the potatoes stirring them every 15 minutes for a total of 45 minutes - 1 hour or until tender.

Step 4Stir lime zest over the potatoes and gently stir to distribute the zest.
