Tired of same ole same ole. So I surfed cook books for ideas and found a recipe from 2010 Good Houskeeping magazine. Titled Hearty Lentil Stew and I went to my kitchen and took what I had and made my own version, I did not expect my husband to even eat it. But he did and went back for seconds and told me this was a do over!! Yay me!! I love my Husband!! We had ice tea and corn muffins and called it Dinner.

Ingredients

  • 1 cup lentils picked through and rinsed
  • 1 - envelope of lipton onion soup
  • 4 cups water
  • 1/4 - 1/2 teaspoon ground cumin
  • 1/4 cup sweetend coconut
  • 1/4 pound ground turkey cooked or just break it up in lil pieces and thro in broth like i did.
  • 2 small red potatoes cut cubed in small pieces
  • 1 cup frozen chopped spinach

How To Make lentil stew

  • Step 1
    In 2 quart saucepan, combine lentils, soup mix,water heat till boiling then cover and simmer ten minutes.
  • Step 2
    then add rest of the ingredients stir and cook aprox 15 min on med high turn it off let set for few mins and scoop and eat!
  • Step 3
    Suppose to serve four but we spilt the pot and ate it all! snort snort snort! yum.
