Leek, Potato & Sausage Soup

You can reduce the fat a bit by using turkey smoked sausage.
It's great served with crusty French bread slices and cheese sticks.
Ingredients

4 mediumleeks, chopped (white part)

4 Tbspbutter
-
6 can(s)chicken broth
-
4 mediumpotatoes, peeled and cut into 1/2-inch dice

1/2 to 3/4 csliced carrots
-
1 lbsmoked sausage, sliced and quartered

4 Tbspmilk
-
1 cthinly-sliced fresh spinach leaves
How to Make Leek, Potato & Sausage Soup
- In a large saucepan, cook the leek in butter for 5 minutes, or until soft.
- Stir in the broth and the potatoes and carrots. Bring to a boil. Simmer for 10 minutes or until vegetables are tender.
- Stir in sausage, milk, salt and pepper to taste. Simmer 5 minutes more.
- Just before serving, stir in spinach.
