Great recipe for that holiday buffet table- you and your guest are going to love this take on the 'ol tater tot casserole. Full of pineapple, onions, cheese, potatoes and of coarse BACON, served with a rich cream sauce. What's not to love! Enjoy This recipe has been tweaked a bit by me.

Ingredients
- ISLAND BACON ONION MIXTURE:
- 16 ounces bag tater tots
- - salt and pepper to taste
- 2 teaspoons canola oil
- 8 slices bacon ,chopped
- 3/4 cup pineapple chunks, fresh or canned
- 1/4 cup red onion, diced
- 3/4 cup shredded pepper jack cheese
- SAUCE:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon ground mustard
- 1 tablespoon tabasco sauce
How To Make island tater tots

Step 1Deep fry or bake tater tots until golden brown and crispy according to package directions.Season with salt and pepper. Place on platter .

Step 2Heat a small skillet until hot, then add the canola oil,place bacon pieces in skillet and cook partway, then add the pineapple and onions. When bacon is almost finished cooking, spread the mixture out thin and even in the skillet keeping the ingredients close together. Top with the cheese.

Step 3Once the cheese is fully melted, pour the "sauce recipe" below, over the tater tots on the platter. Remove the bacon-pineapple -onion-cheese mixture carefully with spatula from the skillet and place on the tatter tots..Serve while hot.

Step 4Sauce: Combine all ingredients and mix until smooth.
