Ingredients
- 8 to 10 medium potatoes
- 8 ounces cream cheese, softened
- 8 ounces sour cream
- 1/2 cup melted butter
- 1/4 cup chopped chives
- 1 clove garlic, minced
- 2 teaspoons salt
- dash paprika (optional)
How To Make irish potato casserole

Step 1Cook, drain, and mash potatoes.

Step 2Beat cream cheese and sour cream together until smooth. Add potatoes and all remaining ingredients, and then beat until combined. Spoon into lightly buttered two-quart casserole, cover and refrigerate.

Step 3Remove from refrigerator 15 minutes before baking. Uncover; sprinkle paprika on top (if desired). Bake uncovered at 350 degrees about 40 minutes, or until thoroughly heated.
