This is a great way to use up leftover mashed potatoes. My family has started requested I make too many potatoes just so we can do this the next day. Even if it doesn't all get eaten the first time, you can reheat in the microwave and they are super yummy. You can adjust the ingredients based on your taste. Think what you put in your potato salad to make it yummy and toss it in. Bacon would be good. :)

Ingredients For ho potato salad

  • 3 c
    mashed potatoes (leftovers work great!)
  • 2
    eggs
  • 1/2 c
    mayo
  • 2 Tbsp
    mustard
  • 2 Tbsp
    pickle relish, sweet or dill
  • 3 Tbsp
    onion, minced

How To Make ho potato salad

  • 1
    Heat up mashed potatoes in skillet.
  • 2
    Add in mayo, mustard, relish, and onion. Stir until blnded uniformly.

    Push potatoes to the side in the skillet making room to crack your eggs.
  • 4
    Crack eggs and stir to scramble.
  • 5
    Mix eggs into potato mixture.
  • 6
    Continue to heat and stir until mixture is warmed through and mixed well.
