ho potato salad
This is a great way to use up leftover mashed potatoes. My family has started requested I make too many potatoes just so we can do this the next day. Even if it doesn't all get eaten the first time, you can reheat in the microwave and they are super yummy. You can adjust the ingredients based on your taste. Think what you put in your potato salad to make it yummy and toss it in. Bacon would be good. :)

Ingredients
- 3 cups mashed potatoes (leftovers work great!)
- 2 - eggs
- 1/2 cup mayo
- 2 tablespoons mustard
- 2 tablespoons pickle relish, sweet or dill
- 3 tablespoons onion, minced
How To Make ho potato salad

Step 1Heat up mashed potatoes in skillet.

Step 2Add in mayo, mustard, relish, and onion. Stir until blnded uniformly.

Step 3Push potatoes to the side in the skillet making room to crack your eggs.

Step 4Crack eggs and stir to scramble.

Step 5Mix eggs into potato mixture.

Step 6Continue to heat and stir until mixture is warmed through and mixed well.
