I love good fried potatoes but not the fat associated with them. I developed this recipe to be able to enjoy this comfort food.

Ingredients

  • 3 medium potatoes
  • - olive oil spray
  • 1/2 cup white onions - diced

How To Make healthy and wonderful fried potatoes

  • Step 1
    Wash potatoes well. Dice potatoes in 1/4 inch pieces.
  • Step 2
    Spray a micro-wave safe dish and add potatoes. Spray potatoes lightly and mix to prevent sticking. Cook in micro-wave on baked potato setting. If the potatoes are not quite done add two minutes and cook until desired tenderness.
  • Step 3
    Spray a non-stick skillet with the olive oil spray. Add potatoes and onions. Brown the potatoes on medium heat for about seven to ten minutes. Serve with your favorite meat.
