healthier choices candied sweet potatoes

I grew up eating candied yams, the kind smothered in brown sugar and corn syrup. So this is as close as I've gotten so far to that yumminess but without all the sugar.

Ingredients

  • 4-5 medium yams
  • 13 1/2 ounces jar sugar free apricot jelly
  • 1/4 teaspoon orange zest
  • 1 teaspoon cinnamon
  • pinch nutmeg
  • pinch cloves
  • 1/4 cup unsalted butter
  • 1/4 cup chopped nuts

  • Step 1
    Par-boil yams till slightly tender, about 25 min. Do this a day ahead of time and refrigerate, or let cool if doing the same day you need them.
  • Step 2
    Remove skin, using a fork and dragging it down the potato is an easy way to do this.
  • Step 3
    Place jelly, butter, orange zest and spices in small saucepan, warm to melt. Stir to combine.
  • Step 4
    Slice potatoes into rounds about 1/2" thick. Layer in a 9" baking dish or cast iron skillet using half of the potatoes, pour half the glaze on, then layer the other half and pour remaining glaze on and sprinkle with chopped nuts.
  • Step 5
    Bake 375° for about 30 min. with lid on, remove lid and bake 15 or so min. longer. When you can insert a knife or fork without resistance, potatoes are done.
