I love Salmon as you already know and this is one very simple Salmon dish. It is basic comfort food in our home. I love the creamy dill sauce over the Salmon and veggies. The bacon adds just a little savor to the dish.

I made this last year for my birthday dinner because I didn't feel like going out.

Ingredients

    6 oz. of salmon fillets
  • ·
    new potatoes
  • ·
    frozen or fresh peas
  • 6 - 8 slice
    cooked and crumbled bacon
  • 1/2 c
    squeezed lemon juice
  • 1 - 2 Tbsp
    olive oil
  • 1 Tbsp
    butter
  • ·
    salt and pepper to taste
  • DILL SAUCE

  • 1/2 c
    mayonnaise
  • 1/2 c
    sour cream or plain yogurt
  • 1 tsp
    fresh lemon juice
  • 1/2 tsp
    salt
  • 1 1/2 Tbsp
    fresh dill or 3/4 tsp of dill weed
  • GARNISH

  • 6 - 8 slice
    lemon, thinly sliced
  • 1 - 2 sprig(s)
    of fresh dill

How to Make Grilled Salmon w/Dill Sauce over steamed potatoes, peas and bacon

Step-by-Step

  1. Prepare you dill sauce and set in refrigerator till ready to serve.
  2. Rinse your salmon fillets with water and pat dry. Now place them flat in a shallow baking dish and pour the lemon juice over them and refrigerate for 10 minutes to marinate them. Turn them once while in the marinade.
    Meanwhile, begin to steam your potatoes and peas. Cook up your bacon and crumble.

    [Do not let the fish sit any longer than 15 minutes in this lemon marinade or else you will ruin the fish. I have done and let it sit for 1/2 hour and all you could taste was lemon. It was terrible!]
  3. Remove your fillets from marinade and lightly coat with your olive oil. Cook salmon 4-6 minutes on each side depending on the thickness of your fillet.
  4. Place your steamed veggies in a bowl and mix with 1 tbsp. of butter, salt and pepper and add your bacon. Now, place your fillets on top and pour your dill sauce over them. Garnish with lemon slices and a sprig of dill.
