greek roasted potatoes
This is a great potato side that has a hint of lemon. The recipe is from my friend whose blog is Inpatskitchen. Don't be alarmed by the baking time. It is really good served with Roast Chicken or to fancy up store bought Rotisserie Chicken.

Ingredients
- 4 medium yukon gold potatoes, cut into thick wedges
- 1/2 cup pitted kalamata olives
- 1/2 cup water (more if needed)
- 1/2 cup olive oil
- 4 - cloves of garlic, minced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon dry oregano
- - juice of 1/2 a lemon
- - sprinkle of parsley if desired
How To Make greek roasted potatoes

Step 1In a baking dish large enough to keep the potatoes in one layer, combine all the ingredients.Bake at 400F for 30 minutes. Turn potatoes over and bake another 30 minutes, adding another 1/2 cup of water if dish is dry.

Step 2Sprinkle with parsley just before serving if desired.

Step 3This dish can be easily doubled or even tripled to feed a larger group. They are great leftovers too!!
