grated sweet potato pudding (aunt marjorie)

My Aunt Marjorie was quite a cook, and could turn out delicious vegetable dishes as well as baked goods and desserts. This one is a favorite of ours. Recipe is from her unpublished cookbook, compiled by her granddaughter Jessica.

Ingredients

  • 2-3 cups raw sweet potatoes, peeled and coarsely grated
  • 2 large eggs
  • 1 can (12 oz) evaporated milk
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla flavoring
  • 1 cup white or brown sugar
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon nutmeg

How To Make grated sweet potato pudding (aunt marjorie)

  • Step 1
    Preheat oven to 350°. Cook grated sweet potatoes in boiling water 5 minutes; drain well.
  • Step 2
    Combine sweet potatoes, eggs, milk, butter, vanilla, sugar, and spices in large mixing bowl. Beat together 1 minute. Pour into greased 2-quart casserole dish, or into 6 individual 1-cup ramekins.
  • Step 3
    Place casserole or ramekins in a larger pan of hot water, and bake for 45-50 minutes (a bit less for individual ramekins), until set in middle (test with knife). Allow to cool 5-10 minutes before serving.
