4-6fresh sweet potatoes and yam combination
1 clight brown sugar
1 cwhite granulated sugar
3 tsp(heaping) butter
1/2 corange juice or pineapple juice or lemon juice
How to Make Glazed Sweet Potatoes
- Boil potatoes and yams until done but not over-cooked. They need to be firm, not mushy. Let them cool until able to peel off skins easily. Slice the potatoes length-wise and lay them in a 9x13 baking dish in a single layer.
- Make a syrup with the rest of the ingredients by boiling for just a few minutes and pour over the sweet potatoes. Put in 400 degree oven and baste every few minutes.
- This needs to cook slowly until bubbly before serving. Length of time depends on how hot the potatoes are & how many.
But this is worth the time it takes to bake!
