This is my version of my Mom's German Potato Salad. Many fond memories of this as a child and oh so good. It can be a side dish or a main course, up to you

Ingredients

  • 6 medium - russet potatoes
  • 1 large - yellow onions
  • 8 ounces bacon diced
  • 2 tablespoons all purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon prepared mustard
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1/2 cup apple cider vinegar
  • 1/2 cup water

How To Make german potato salad

  • Step 1
    Peel and cube potato's into 3/4 " cubes and boil until soft
  • Step 2
    rough chop onion and cut bacon into 1/2" sliced
  • Step 3
    Sauté bacon and onion until translucent
  • Step 4
    add flour, sugar, salt, pepper, mustard, water and vinegar,
  • Step 5
    sauté about 5 minutes until thick and flour cooks.
  • Step 6
    add cooked potato's and stir to incorporate sauce. Continue to cook about 5 more minutes and serve hot
