~ garlic & herb roasted baby red potatoes ~

I always par cook my potatoes for home fries to insure crispy potatoes once frying and cutting the cooking time in half. Same goes for these wonderful potatoes. Steaming really cuts down on baking time. Awesome crispiness and flavor as well. If you don't own a steamer, perhaps boil until tender, but not mushy. Steaming is best though, you won't boil all of those healthy nutrients away. You can buy a microwavable steamer such as the one I use for little to nothing. I think I paid $5 dollars at Family Dollar . These potatoes are great with most meat entree's. Enjoy!

Ingredients

  • 2 1/2 pounds baby red potatoes or roughly 17
  • 3 - 4 tablespoons olive oil or enough to coat
  • 1 teaspoon steak & shake fry and steak burger seasoning - if you don't have, its worth buying a bottle as i use it on so many things
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon fresh cracked black pepper
  • 6 - 7 cloves garlic , minced

How To Make ~ garlic & herb roasted baby red potatoes ~

  • Step 1
    Cut washed potatoes in half. I used a few medium potatoes and cut into fourths. Steam in microwave for 20 minutes or on top the stove, until fork tender.
  • Step 2
    Preheat oven to 450 degree F. In a baking dish, mix oil, salt, pepper, garlic, onion powder and paprika well.
  • Step 3
    Add the potatoes, carefully tossing and making sure all are coated with the mixture. Add more oil if needed.
  • Step 4
    Bake for 15 - 20 minutes, turning once half way during baking time, or until desired crispness. Serve as a delicious side to any meat entree.
