fresh summer green beans

I go to a farm in early summer, that sells their fresh produce and can't wait to get home and put a pot of these on the stove. They are so good. I make a huge pot full and eat on it for a couple days.

Ingredients

  • 2 cups dry pinto beans, that are washed and have soaked in water a few hours
  • 2 to 3 pounds fresh green beans
  • 2 - onions, coarsley chopped
  • 6 to 8 - new red potatoes, quartered
  • 1 pound cubed ham
  • 1/2 stick butter
  • - salt and pepper to taste
  • 1 tablespoon ham flavoring granules

How To Make fresh summer green beans

  • Step 1
    In large pot, cover pinto beans and onions with water. Over medium high heat, bring to a boil, turn heat down and continue cooking, stirring occassionally and adding water as needed until beans are almost totally tender.
  • Step 2
    add fresh green beans, ham and seasonings, more water to cover and continue cooking, covered.
  • Step 3
    when beans are tender, add potatoes. Make sure there is enough liquid covering vegetables as it cooks down.
  • Step 4
    when potatoes are fork tender. Add butter. stir in and dish out.
