I go to a farm in early summer, that sells their fresh produce and can't wait to get home and put a pot of these on the stove. They are so good. I make a huge pot full and eat on it for a couple days.

2 c
dry pinto beans, that are washed and have soaked in water a few hours
2 to 3 lb
fresh green beans
onions, coarsley chopped
6 to 8
new red potatoes, quartered
1 lb
cubed ham
1/2 stick
salt and pepper to taste
1 Tbsp
ham flavoring granules

How to Make Fresh Summer Green Beans


  • 1In large pot, cover pinto beans and onions with water. Over medium high heat, bring to a boil, turn heat down and continue cooking, stirring occassionally and adding water as needed until beans are almost totally tender.
  • 2add fresh green beans, ham and seasonings, more water to cover and continue cooking, covered.
  • 3when beans are tender, add potatoes. Make sure there is enough liquid covering vegetables as it cooks down.
  • 4when potatoes are fork tender. Add butter. stir in and dish out.
